Sour Cream Enchiladas
This is the recipe that won Dad's heart. I made it for him when we were first dating and it was love at first bite :)

3 chicken breasts, boiled and cut into bite size pieces
1 lg. Sour cream (2 c.)
1 can cream chicken soup
1 chopped onion
1 can diced green chilies (optional)
1-2 c. grated cheese
Combine all ingredients except 1 cup of the cheese. Set aside 1 cup of the mixture. Heat corn tortillas in hot oil just enough to soften. Put mixture in tortilla and place in a 9x13 pan, seam side down. Spread extra filling on top and cover with extra cheese.
Bake 350°F for 30 minutes.
