Steel Cut Oatmeal


My new favorite breakfast.

Ingredients
1 tablespoon butter
1 cup steel cut oats
3 cups boiling water
1/2 cup whole milk
1/2 cup plus 1 tablespoon low-fat buttermilk
1 tablespoon brown sugar
1/4 teaspoon cinnamon
Directions
In a large saucepot, melt the butter and add the oats. Stir for 2 minutes to toast. Add the boiling water and reduce heat to a simmer. Keep at a low simmer for 25 minutes, without stirring.

Combine the milk and half of the buttermilk with the oatmeal. Stir gently to combine and cook for an additional 10 minutes. Spoon into a serving bowl and top with remaining buttermilk, brown sugar, and cinnamon. I add frozen berries from Costco and brown sugar. Yum!

Pumpkin Griddle Cakes with Cinnamon Cream Syrup

We served these (without the cranberries and walnuts) at Young Women in Excellence and they were delicious! A great fall treat.

Pumpkin Griddle Cakes
2 C flour
1 ½ tsp baking powder
½ tsp baking soda
1 tsp pumpkin pie spice
¼ tsp salt
3 large eggs
1/3 C packed light brown sugar
1 ¼ C milk
1 ¼ C fresh or canned solid-pack pumpkin puree
3 Tbsp vegetable oil
In medium bowl, stir together flour, baking powder, baking soda, pie spice, and salt. In large bowl, stir together eggs and sugar. Stir in milk, pumpkin, and oil. Add flour mixture and stir just until smooth. Cook on a hot griddle.
Top with dried cranberries or raisins softened in a pot of warm maple syrup, and a sprinkling of toasted walnuts.

Cinnamon Cream Syrup
1. C sugar
½ C light corn syrup
¼ C water
½-3/4 tsp cinnamon
½ C evaporated milk
In small saucepan add all except milk. Boil, stirring constantly 2 minutes. Remove from heat. Cool 5 minutes. Stir in milk. Makes 1 2/3 cups.

German or Puff Pancakes

Preheat oven to 400
3 eggs
1/2 c. flour
1/2 c. evaporated milk
1/4 tsp. salt
2 T. butter
Set 9" clear glass pie plate or cast iron skillet into hot oven on lowest oven shelf until very hot. Meanwhile, beat together eggs, flour, milk and salt. Remove pie dish from oven, add butter and rotate dish until fat is melted. Add batter immediately. Bake on lowest oven shelf for 20 minutes or until golden.
Serve immediately with syrup, jam, apple sauce, peaches, brown sugar, sour cream.
Makes 4 servings.
For large group, triple recipe and bake in 9 x 13" pan.

Grandma Morris's Waffles


These are Dad's favorite breakfast food!

3 eggs
1 1/2 c. buttermilk
Sift together:
1 tsp. soda
1 3/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 c. butter, melted
Separate eggs, beat egg yolks, beat in buttermilk and beat in sifted dry ingredients and melted butter. Add 1/2 tsp. vanilla.
Beat Egg whites, not too stiff.
Fold egg whites in.
Heat wafflt iron to 4. Cook 3-4 minutes.

Mantes Le Jolie Crepes

Devin perfected this recipe while serving as a missionary in France. I don't think anyone makes them as well as Devin. We just wish he would make them more often.

Family size serving
3/4 c. sugar
3 1/2 c. flour
1 packet vanilla sugar or 1 T vanilla extract
9 eggs
4 c. milk
6 T cooking oil
Voila! Authentic Mantes-la-Jolie crepes!

Creme Brulee French Toast

1/2 cup unsalted butter
1 cup packed brown sugar
2 T. corn syrup
Good French Bread, sliced, to cover butter mixture
5 large eggs
1 1/2 cups half and half
1 t. vanilla
1/4 t. salt
In a saucepan, melt butter, brown sugar and corn syrup. Pour into 9 x 13 baking dish. Arange bread pieces on top. Beat together eggs, half and half, vanilla and salt. Pour egg mixture over the top of the brea.d Cover and chill overnightin the fridge. The next morning bake uncovered at 350°F for 3-40 minutes.
