I got this recipe off a Susan Branch calendar. I tried it one summer and I have loved it ever since.
8 garden tomatoes, rougly chopped
3 cloves garlic, pressed
3 gr. Onions, chopped
1 c. olive oil
1/4 c. balsamic vinegar
2 T basil
2 T parsley
1 tsp. sugar
Lots of freshly ground pepper, salt to taste. Put all ingredients in a glass bowl or jar, cover tightly and sit in the sun 4-5 hours.
Use as sald dressing, on toast or over server over hot pasta.
