Preheat oven to 400
3 eggs
1/2 c. flour
1/2 c. evaporated milk
1/4 tsp. salt
2 T. butter
Set 9" clear glass pie plate or cast iron skillet into hot oven on lowest oven shelf until very hot. Meanwhile, beat together eggs, flour, milk and salt. Remove pie dish from oven, add butter and rotate dish until fat is melted. Add batter immediately. Bake on lowest oven shelf for 20 minutes or until golden.
Serve immediately with syrup, jam, apple sauce, peaches, brown sugar, sour cream.
Makes 4 servings.
For large group, triple recipe and bake in 9 x 13" pan.
