Chicken Tosca
I cut this recipe out of a magazine many years ago. It became one of Dad's favorites.
1 tsp. salt
1/4 tsp. pepper
2 whole chicken breasts, halved, skinned, and boned (I use Costco chicken tenders)
2 T. flour
3 T. butter
1 T. olive oil
Spaghetti sauce (either home made or store bought)
2 1/2 oz. salami, minced (1/2 cup)
2 1/2 oz. provolone cheese, shredded (1/2 cup)
Sprinkle salt and pepper on chicken, rub in well. dredge in flour, shake off excess.
Melt butter and oil in pan. Brown the chicken on both sides, remove, keep warm.
Add spaghetti sauce to pan and bring to boil.
Return chicken to baking dish in a single layer.
Cover with salami and cheese
Bake in oven 350 for 20 minutes or until chicken is fork tender and cheese has melted. Serve chicken with sauce spooned over top.
